Z is for fiori di zucca fritti: Fried Zucchini Blossoms

12 flowers of zucchina (american: zucchini)
1 hectogram wheat flour
olive oil, salt, pepper (optional)

Clean the zucchini flowers. Cut the stem at the base - right above where the spiky-threads are - so that the pistil will fall out. [The pistil tastes very bad. Also, yellow flowers taste better than green flowers.]
Make a batter by putting flour in the bowl with some cold water to a thick paste.
Pass the flowers in the batter and fry in abundant olive oil, until they turn golden.
[This recipe does not call for egg.]
Drain on paper towels to get rid of excess oil. Salt and pepper to taste. Serve hot, alone or in a dish of other fried things.
